Easy Paleo birthday cake
For my Husband's Birthday, I made a Paleo birthday cake with Chocolate frosting which was so easy.
This cake is so delicious I use it (without the frosting) as a breakfast item also. You can spread coconut butter or jam (even almond butter!) on it.
EASY PALEO BIRTHDAY CAKE
MAKES: ONE 9 INCH ROUND CAKE
½ cup coconut flour
½ tsp baking soda
¼ tsp unrefined sea salt
½ cup melted coconut oil
¼ cup full fat coconut milk
2 tsp vanilla extract
Preheat oven to 350'F. Oil a 9" round cake pan and line bottom of pan.
In a large bowl, sift together coconut flour, baking soda, and salt. Set aside.
In another bowl, whisk together 3 eggs, coconut oil, coconut milk, and vanilla until well mixed.
Add wet to dry and mix well to combine.
Bake for 28-30 minutes, until toothpick inserted into center comes out clean and cake is golden.
1 cup semi-sweet chocolate chips or chopped chocolate
1/4 cup coconut milk / full fat
1/4 cup coconut oil
1 teaspoon vanilla extract
pinch of salt
In a small saucepan over medium-low heat, mix together the chocolate chips, milk, coconut oil, vanilla extract and salt. Stir until melted and completely smooth.
Let the pan cool for about 15 minutes (or until cool enough to place in the refrigerator) and then place the pan in the refrigerator for about 10-20 minutes, stirring after every 5 minutes, or until firm enough to spread on the cupcakes.
Spread frosting on top of cake.
