Luxury close to nature
Samphire is a salty sea vegetable that grows in the United Kingdom and across Eurasia. Known for more than 500 years, this small halophyte grows in rocky and marshy areas near salt water sources. These small plants can grow in vast fields if left undisturbed, and have picked up a number of nicknames along the way, including sea asparagus and sea pickle. It is a thick, grass-like plant that doesn’t grow longer than 3-4 inches, but can be readily picked and prepared in a number of ways.
Before visiting Salishan Spa and Golf Resort located in Gleneden Beach, I had never heard of this little plant, which is delicious. The sophisticated signature dining room of the resort provides a menu that focuses on on Coastal Range Cuisine sourced locally near our Gleneden beach resort. Executive Chef Andrew Garrison’s formal training is steeped in classic French cuisine techniques. He and his team work closeley with local partners up and down the coast for the freshest farm foods, fish, cheese, and more.
On the night we ate there, the restaurant was offering a 3-course tasting menu at $59. I started with Netarts Bay Oysters served Champagne Mignonette, Lemon and followed up with Chilled Pea Soup Dungeness. The entrée of choice was a lightly pan-seared ling cod, which was made to perfection. The balance of the menu allowed for healthy options for meat-eaters as well as vegetarians.

The resort is surrounded by the spectacular Oregon coastal forest and the tranquil Siletz Bay and boasts a 18-Hole Golf Course.
The resort is also home to miles of trails so visitors may explore the central Oregon Coast and Gleneden Beach through a private beach trail access.
For me, the best part was running to the beach trail and looking out to the beautiful bay in the mornings. I also had the opportunity to indulge in the spa. The Spa at Salishan Resort is the epitome of luxury and relaxation. The spa has an outdoor infinity whirlpool, steam room and sauna. I opted for their popular, Essential Facial ($130, 60 minutes), serviced by Candie, which was simply amazing. I left feeling renewed, refreshed and admiring the simple beauty of the resort.
Many times when you think of luxury or indulgence, you don’t equate it with being close to nature and the outdoors. Salishan offers both to the traveler who is seeking refinement and luxury, married with being closer to nature.
